Skip The Pancake Mix!

Hey Guys! It's been a while since I've written, things have been so hectic lately, but I have something amazing for you!
Lately I've been working out everyday and maintaining a healthy balance on what I choose to eat. Especially since we are in quarantine, I think it's very important to focus your anxiety or frustration on a positive habit. Waking up in the morning to a healthy breakfast is the ultimate pick me up to any bummy day!
I have an amazing recipe that will blow your mind! I know we all love pancakes, but do you actually know what you're consuming? Why not go for something equally as good, and 10 times more healthy? Banana and eggs pancakes my friend, that is the solution. It sounds strange, but once you take your first bite you might go to heaven. It is super simple to make as well. Are you worried you'll gain all the calories back when you add syrup? Yeah don't worry about that. I have a super easy blueberry syrup jam recipe for you!
Ingredients~ Pancakes
- 2 medium eggs
- One large banana
That's it.
.....If you want to add some spice to it, by all means do so. Here is my spin on it.
- 2 medium eggs
- One large banana
- Dash of cinnamon
- 1/2 cup rolled oats
- Dark Chocolate chips or cocoa nibs!!
Ingredients~ Blueberry Syrup Jam
- 1/2 cup frozen blueberries
- 1 tbsp organic honey
- Dash of cinnamon
Preparation For Pancakes
- Mash one banana in a bowl until you are left with a thick creamy consistency
- Add two eggs
- Add cinnamon
- Add rolled oats
- Add Chocolate chips
- Mix Mix Mix!
- Heat up your pan or griddle(Low to Medium Heat), and add butter or olive oil.
- Pour a small amount of batter to get more pancakes!
- Flip the pancake when the outside starts to brown
- YOU'RE DONE!
Preparation For Jam~
- Add blueberries into a bowl and microwave for about 1~2 min.
- Mash the blueberries with a fork
- Add tbsp of honey
- Add cinnamon
- Mix and YOU'RE DONE!
